Using Dynamat between the panel and the wood frame would defeat a primary purpose of installing them in those frames. It would decouple the panels from the frames. Then again, much of our reasoning is speculative and I don't think anyone has tried what you're suggesting. Still, as one who screwed his panels directly (and securely) to his hardwood frames, I can speak for the efficacy of doing that.
You wouldn't be the first neophyte to approach this project with trepidation only to surprise himself with his woodworking abilities - patience is a virtue (just repeat that 17,000 times and you will be ready). Take your time with your construction project. If you are like I am, you will learn much as you proceed and will probably have an urge to do it again - only better.
Above all, have fun! Enjoy the process as a labor of love. Post some pictures - share your triumph and your tribulations. If you run into difficulty, I'm sure someone here can lend a little advice (and certainly some support).
