OK. It's just multichannel.

It is really the common arrangement for multichannel, not multi-track, recording. An array of 4-5 microphones are place to capture direct as well as hall sound and those feeds are discretely reproduced by 4-5 loudspeakers positioned in a scaled-down array that mimics the microphone positions. Standard practice.

"Are you simply using one mic per channel?"
Yes
"Or are you taking various snapshots from around the soundstage, remixing them, and then re-creating a new multi-channel mix?"
