You've replaced one misconception with another

No, your initial presumption was correct, albeit limited to just one type of polyrhythm. It is YouTube that has misinformed you.

And that's another type of polyrhythm. But not the only type. The only generalization one can make about polyrhythms is that they involve 2 or more ("poly" = multiple) rhythms simultaneously.
