My bet is that no, there would not be a decrease in sound quality, and more likely it will sound better than the CD changer. But you never really know until you try it for yourself.

You'll need a healthy wireless network to stream from your server if both it and the Touch are connected wirelessly. A rule of thumb is usually no more than one wireless hop between the server and player. But again, you won't really know until you try it. If your wireless network doesn't suffers from interference, and you're not trying to go great distances, it should work fine.
