I see you've selected the slow response - fast would pretty much emulate the traditional VU meter action, but slow is pretty close to that. I'd go with the 14dB headroom if you're listening to non-electronic music. So 88dB means an instantaneous peak of 102dB would be a safe minimum. SET or other tubes with little or no feedback will overload fairly gracefully, so you might get away with 3 to 6 dB less.
That's with two speakers of course - two speakers at 100dB each is 103dB*, and would thus require 0.8 watts per channel.
* Assuming random phase in the reverberant field, which is a pretty good assumption in typical setups.
