I found a method for cooking a roast called "Poor Man's Prime Rib". It calls for coating the roast with rub, heating the oven to 500 degrees, pop in the roast with a WiFi thermometer, lower the temperature to 475, and baking for 25 minutes. At this point, you turn off the oven and let it continue to cook in the residual heat for around 2.5 hours or whenever the center reaches 145 degrees. It looked promising, with a nice pink center. It was still much tougher than a rib roast, pink or not.
