Use of the twisted pairs utilizes every pairing to lower inductgance as much as possible. Use of the 4 pairs each as a polarity makes your cable into a big group of 4 conductors, which if they are arranged in a star quad, will reduce inductance some, but not nearly as much as use of each pair for lowering mutual inductance.See: /audio/cables/messages/17.html

I would also like to point outn that the dielectric involvement of the PVC jacket is higher when the pairs are not utilized. This would be relevant IF you used a plenum grade of CAT5 (not all CAT5 uses good materials, only certain part numbers) and the pairs had teflon insulation.
If you do not have a plenum grade of CAT5 cable, it would be possible to obtain a further increase in sound quality over what you have now, but getting the good part numbers, and braiding the pairs per Chris VH recipe, only use 16 pairs rather than 27!
