Having lived with both and sold both in various hi-fi shops, I can say without hesitation that yes, time/phase coherence makes a difference. Maintaining the original waveform is critical to hear the music as it was recorded, in my opinion. Having said that, there are speakers out there that claim to be time/phase coherent that are not. A simple first order crossover is time/phase coherent. It's easy to add too many parts to the crossover if you don't know what your doing, and this in turn, degrades the waveform. The designer must use the finest drivers available, so the designs tend to be a bit more expensive. If implemented properly, one need not keep the volume low as some here have mentioned. My own 1st order, time/phase coherent speakers will play at 105 db without driver compression. Your on the right track.
