I'm not quite understanding your use case for the new Mac Mini. If I'm understanding your post, it won't be used for audio purposes or for spreadsheets. What WILL you use if for?
Buying a new Mac Mini isn't a difficult decision. The very base model retails for $599 and is often available for $549 - sometimes on sale for $499. That's with the latest Apple M4 CPU, 16GB RAM, and 256GB SSD.
It's a personal choice but I always opt for the 512GB SSD or more in a general purpose Mac for daily use. I don't mind paying the premium as I prefer NOT having an external SSD hanging off the Mac Mini unless it is for backups only. Plus the higher capacity internal SSDs are faster vs the base 256GB.

Current Mac Minis use the latest Apple M4 chip so it will be smokin' lightning fast vs any Mac you've had in the past ;-)
