...you can make a lot of other variations. Any varieties of nuts, or leafy green herbs. Try some mint, cilantro, Italian parsley, or cashews, peanuts, pistachios. If you're into spice/flavor, add some chilies--either fresh or rehydrated dried chilies. There are hundreds of different chilies with different levels of heat and different flavor profiles. You don't have to stick with olive oil either--try some avocado oil (very neutral) or sesame oil (very strong).
Pesto is also very useful as a basis for a great vinaigrette. Pick an acid--citrus, wine, vinegar--lots of varieties--enjoy!!!
