I've done that on occasion and it's not too difficult if you keep a small round file handy to do it with. Once I'm satisfied I've corrected the eccentricity, I mark with a dot or small arrow on the label right next to the spot where the new radius should contact the spindle. Then I just gently press the LP against the spindle in that direction before starting to play the side.
