Though I don't own any of the kit you use, I've been using USB-driven DACs connected to a sever via an "endpoint" very like (though I fear not as good as) the microRendu for well over ten years. I thus have a pretty good idea of the issues involved at least at the system/end-user level.
I suspect that (I'd wager that . . .) by-passing the microRendu's excellent USB link to your DAC and connecting a comparable DAC direct to your Mac via Ethernet would lead to a significant deterioration in SQ. Neither the Mac nor LANs was designed with audio quality in mind; the microRendu most certainly was on both the Ethernet In and USB Out sides.
If you've got the upgrade itch (who among us doesn't get it from time to time?), you could do worse than look at Uptone Audio's EtherRegen. It's surely worth asking folk on Uptone's forums who have already added an EtherRegen to their microRendu.
