They do different jobs. USB is "real time" so the DAC process the signal as it arrived in a stream. Using Ethernet your streamer requests "packages" of data from the internet and it processes it into a stream that your DAC can then converts to analogue. The alternatives to USB are Toslink (optical) or SP/DIF (RCA or AES/EBU). At least that's how I understand it.
Incidentally Roon is only a fancy remote control - your music is delivered from Tidal or Qobuz or another streaming service. As I understand it!
