  I don't think that 40 ohms is the output impedance of the headphone stage but a reference impedance for the connected device for what is a power output specification i.e. the stage provides 316mW output ( +25dBm) into a 40 ohm load.
  
  Have you tried the 32 ohm Beyer Dynamics?

    Boosted the volume on the encoders
    in the monitor section for plenty of volume.

      Excellent to hear. BTW, that mixer offers an awful lot for the money. It seems a total bargain.

        Getting these with the board really helped -
        QSC K12.2 2000W 12" Powered Speakers
        Shure 4 channel wireless microphones
        Took quite a lot of tweaking though.
