Does anyone know where I can have an HDMI cable made up with custom pin assignments for a non-standard (non-PSAudio) I2S connection? Thanks for any help.

If your are handy with a soldering iron and have a DMM (multimeter), you can do this yourself. Buy a cheap HDMI cable and cut it in half. Re arrange the four balanced pairs to match the two components together. Heat shrink the splice. Just connect the other wires straight through (they probably are not used anyway for I2S);Now for HDMI video, this could be disaster due to the impedance mis-match from the splice. But for I2S which operates at much lower frequencies, it should be fine.

I have no personal experience with this company, Audiolund, but it looks like they have both the PS Audio (and a host of others) which they refer to type A and then type B which covers Pink Faun, Wyred4Sound, Audiobyte, Wadia, Rockna, SMSL, LKS, Gustard, JAVS, Singxer
They may also do custome spec work as well.
Good luck.
