Keep in mind that the manufacturer of a cutting board has to
recommend a digestible oil for its products. We aren't using
these boards to cut food on, so our requirements aren't the
same. Linseed oil is poisonous and I believe lemon oil can
turn rancid in contact with meat juices. That's why the
manufacturer will not recommend them. Just for kicks, why not
call the mfr and ask him/her for a finishing recommendation
when you use their cutting boards as hifi appliances. I'm sure
they'll have extensive recommendations:-) I think your best
bet would be to listen to Mapleshade and just lacquer the boards.
