3 shelves 18" to 24" wide, 24" long could be cut from a nominal 8"x 96" board of 8/4 Maple. Prices hover around $7.50 a board foot, about $80.
Any hardwood lumber yard will surface the board, S4S (surfaced all 4 sides) to 1 3/4" then cut into 3 or 4 lengths for a nominal fee. Some, like the Amish run place I use, have a furniture shop on site which would do the glue-up, plane and sand to your desired shelf size. Maybe $100 more.
Less than the cost of one cutting board. Call it $200 for 3 or 4 shelves you could leave raw (I'd advise at least paste wax) or apply the very nice Minwax Wipe On polyurethane they sell everywhere.
