What cartridge are you using that wants to see 61,800 ohms? The standard for M/M is 47,000 and M/C is generally between 100 and 1000 ohms There are exceptions, but usually only for the moving coils.
Your method of using a male RCA into a double female RCA isn't going to work, because you'll be paralleling the two resistors to ground. Plug some numbers into the calculator linked below, and you'll see how it works. In the case of the 50k and 12k you've given, you'll get something like 9.7 ohms.
To go higher, use the 100,000 ohm setting on your phono preamp (man, are you sure there is a 100k setting for cartridge loading? Never heard of that before) and plug numbers into the calculator to get your desired 61.8k ohms, then use your male/double female RCA method.
Regarding the type of resistors to use, I've tried Audio Note Tantilums, Rikens, and other quality resistors for phono loading, and never heard a difference. Not that I've never heard a difference between resistors, but never in the phono input to ground position.
Lastly, where did you read that you'd need a five watt resistor for this job? A one-eigth to one-quarter watt is plenty.
