Unless the equipment has regulated supplies or some from of inherent regulation, the secondaries and rectified DC will fluctuate proportionally with the AC applied to the primaries. The sonic effect will vary depending of the specific piece of equipment. Line voltage fluctuations like you describe are common and any "real world" designer worth his salt will take this into consideration. That said the 120 volt point would be the center point and is usually the set line voltage for testing and measuring equipment. I've had equipment that sounded better at higher voltage and some that better at lower voltage but not vastly better or worse.
