I hope the cabinets are pretty small. Otherwise, I'd use 19mm (3/4") for the sides and back. If somehow you can score enough 1/2" for a double thick front baffle, that would be a big plus. Use at least one horizontal brace that ties the front, back, and sides together. Baltic birch is really well-suited for speaker cabinets so you've made a good choice.
