Hifi is simply short for High Fidelity. The definition of Fidelity is the following:
1 a : the quality or state of being faithful b : accuracy in details : EXACTNESS
2 : the degree to which an electronic device (as a record player, radio, or television) accurately reproduces its effect (as sound or picture)
So Hifi means accurate reproduction of its effect (ie. sound) and in the case of recorded media that means exact reproduction of what is on the recording, for better or worse.
High End began as a catch phrase for gear that was reaching for the top of high fidelity (and usually price as well). This has mutated to high price but not sounding to "taste" rather than true high fidelity. Obviously this is not true for all high end companies as many do seek to make true high fidelity.
