Hi All!I’m going to profess my ignorance and ask what is likely an extremely stupid question. If I get flamed, so be it I’m a big boy I can take it!
I have an el cheapo Pioneer DV-563A universal (SACD, DVD-A, et al) disc player and I’m thinking about buying an Olive Musica.
Here’s the stupid question: Is there an external DAC that I can use with both sources that will handle the various data formats (up to 24 / 192) each are capable of providing?

The Apogee Mini-Dac can handle inputs up to 24/192, although I believe 24/192 is available only through 2 input AES cables (i.e., only from pro-audio gear.) I have used mine at Redbook, 24/88.2 and 24/96 through S/PDIF (coax) cables as well as USB. It works flawlessly and sounds good.

The Pioneer will not output any digital SACD signal. For PCM, the digital output is limited to 96/24. 192/24 disc will be downsampled to 96/24 IF there is no DRM limitations on the disc. If there are DRM limitations, then both 192/24 and 96/24 discs will be downsampled to 48/24 or even 48/16. It's all in the manual.
It's not hard to find external DACs that will accept a 96/24 signal.
