It sounds delicious. I admire your confidence. Over the years I have learned not to try to serve tea to an Englishman. But I'm sure your guests will appreciate the effort.
The classic choice would be kachumber: sliced cucumbers, red onion, and tomato dressed with lemon and mint or toasted cumin seeds (no oil). The challenge, of course, is finding an edible tomato.
Your hardy greens with vinaigrette idea sounds pretty good to me, nice and simple.
Another option would be a thin yogurt/mint raita with cukes or shaved carrot.
Spicy mango/lime/basil salad is more common with Thai curry, but it might fit well with your satay and capsicum. Same issue as above, though - finding a ripe mango is a treasure hunt.
Lots of possibilities. I'm getting hungry just thinking about it.
