You can't tell in advance.

In my experience, op-amps sound different depending on the specific application. I've heard both those op-amps sound good and not so good. My advice is install a socket and try a few.

For what it's worth, I found the OPA2604 to sound "warm and tubey" in my Magnum Dynalab tuner--a bit too much so, actually. I didn't like the AD827 either, and finally settled on the OPA2134. Your results will almost certainly vary! Buy a few, they're not that expensive.
