Sorry this took so long, I just stopped by this forum for a glance and saw your post a few weeks late...Cakewalk makes a great software package for amateurs to fart around with guitars and recording, called Guitar Tracks Pro 3. It is $150 at Sweetwater. Ask for Robert Dorion. This will let him do all kinds of fun processing and composing with the guitar that you can't do with analog equipment. Cakewalk software is excellent, I have been using it for 10 years.
As for hardware, here are some choices that are good but cheap:
M-Audio Fast Track USB $100 One input, no MIDI
TASCAM US-122 stereo inputs, MIDI comes with free headphones and a mic too. $200I will email this too in case you are not lurking. Email me if you need more info.
