How do you use those Android Foobar remote programs?

I have been quite used to the ease of operation of a Squeezebox Duet as well as its remote program on Android. Lately, I wanted to explore how much better sound I can get via a laptop USB connection running under async into my Esoteric K-03. The problem is, with the three remote apps that I have put on my android phone (Foodroid, Foobar 2000 Controller and Foobar 2000 remote, I don't seem to be getting the hang on how to actually use it to properly select music (They can all play, so set-up is fine). It appears that I can only either select by genre, after which it would play automatically whatever is under that genre, or if I go with the folders, I can add items in the folder into the playlist, but not directly play them (i.e. if there are 10 songs on the list already, the newly selected album would become the 11th song onward). Furthermore, there does not appear to be a way to clear that play list.

What I am looking for is to access album lists, artist lists, etc., much like on the Squeezebox and be able to start a new playlist or add to it or delete from it as desired. Is this my problem, or is it really the lack of features on these apps?

A side question. When I wanted to A/B the sound from USB and from the CD player (which is acting as the DAC), I would switch the source on the CD player. However, when that happens, the computer would be forced into a bluescreen and restart. Is there some way to avoid that?

All these hiccups have been quite frustrating, but I see that lots of people seem to be using their CAS quite happily, so I am curious to know how I can work it out.
