I'm sorry to say I have no experience with Siemens 12AT7s. You'll have to try them and report back to us all.
The goal is to select 12AT7s with the lowest noise and microphonics. Good section matching is also desirable. It's been my experience that most of the tube's sonic character can be traced to noise and microphonics. The quieter the tube, the more neutral the phono stage.
