I'd recommend an email to Brian about suitable tx replacements. But as its only 10 years old I'd think it should be fine. Tx are designed to last a long time and only a few things really cause them harm. Hum may be treatable with better grounding--have you tried rerouting the ground line and resoldering? Also, try turning the tx itself or the choke so that their orientation to each other and nearby components is changed. This often has some effect on hum.
As for output tx, there are many from An and you can deplete your checkbook quickly by going up the range. Again, Brian may be able to help get you the tx that best matches the quality of your overall circuit.
There are many upgrades possible of course, but I'd say you've got one of the biggies already with your caps as the Jensen copper are really nice caps. So nice that AN themselves had Jensen make them for AN for some time. AN has made their own for years now, but their shared lineage tells of the quality from AN's viewpoint--and mine as I had them in my Kit1 and enjoyed them.
