Interesting question.I'm sure they don't sound excactly the same,and it would be interesting to hear experience from people who might have heard the interstage SE and PSE side by side.
In my opinion there is nothing in hifi thats perfect,there's always give and take.More power is a good thing,but it often might come with a price that it can't sound excactly as fine textured as lower power tubes can.
So SE MIGHT be a little more fine textured,but it will not have quite the same impact and ease as PSE will have.
But this is just pretty much guesses from my side.
I guess someone like Peter Q could have nailed it down pretty close what the differences are soundwise.
One other aspect is that PSE might have more than double the power of single ended,because they operate into a lower primary impedance in the output transformer,which in my view is a good thing.
