What you want is BALTIC birch. This is widely available because it's known for its strength and for being 'void free.' I think it may also be known as "marine ply", but try and find verification to be sure.

Baltic birch is a little bit expensive, but it's absolutely required to get the sound right. It also offers a nice grain for finishing. I just coated mine in a clear, wipe-on poly and they look great.
