Get the 20 amp outlets- bigger than you need is never a problem, but smaller than you need always is.
The 50 amp breakers probably go to your stove and clothes dryer outlets.
The idea of a subpanel is to have in your listening room a box similar to the one at your service entrance, albeit smaller. Then if you ever have to add additional capacity/outlets/balanced 110 line/whatever you have the power source you need to do so in your listening room rather than way down in the basement or wherever. Sixty percent of what you’ll pay the electrician is labor- so instead of running a single 110v/20a line he can run a 220v/30a line that won’t cost you that much more. The most important detail is the ground to the subpanel. Most noise problems are ground related, and if he only runs a 10/4 line from the main panel to the subpanel the ground may not be sufficient. Make sure he runs a 10/3 line from the main panel to the subpanel and a separate 4 or 6 gauge wire from the subpanel to the nearest source of earth ground, preferably no more than 50 feet from the subpanel, installing a new ground rod if required to do so. If there are copper cold water pipes close by they'll do, provided they are not isolated from ground by any PVC pipe sections.
