"So I connect each + & - wire of the Belden to a resistor, then connect the other end of each resistor to the proper pin on the connector in which that wire would have originally gone"

Yes!

"Then I wire a pot in between each + & - points on the pins. After I determine what's the best level, I can take this pot out, measure it, and replace with the proper size resistor?"

Yes!

"What type of pot do I use, and which terminals do I connect these wires to ( 2 sets of 3?)"

Use any "decent" but not expensive one, try a 1k-5k both linear and log would work for this trial. Connect the pot between + and - at the amp side of the resistors.

"As for the shield wire, assuming it goes straight to it's proper pin as normal?"

Yes, connect it as the resistors would not have been there.

"L. Thorsten recommended a 2k2 (2.2kOhms?) resistor for each leg, but we were'nt sure about the jumper resistor value, at the time I wasn't thinking about using a pot to come up with a value."

2.2k seems like a good choice.

"Is this correct?"

Yes, good luck!
