If you can handle it, try inserting a variable resistor and using it to slow the fan down. Slower fan usually make less noise. You unit may well have protective cicuitry that interprets unplugging the fan as an open circuit and shuts down. This would be a fairly obvious protective measure.Also consider the possability that you may "think" it's not overheating with the fan unplugged, but the thermal protective circuit may "think" otherwise!
Don't forget you are voiding the warranty.
