The definitive test for oscillation is to examine the output under various conditions using an oscilloscope of suitable bandwidth (the MOSFETs can oscillate in the MHz region).A quick and dirty test is to feel the series R-C across the output terminals. If they are warm, the amp is oscillating. Also, touch the output devices (BE CAREFUL!! The MOSFET cases are electrically live -the amp rails are at +/-65 volts!) Often, the frequency of the oscillation is a clue to the cause.
My very first DIY MOSFET amp was a Hafler DH200 clone, roughly based on the schematic published in Electronic Design in 1981(?) I think.
