If toe in angle is large enough for the tweeter not to appear in the reflection, you use the reflection of the front edge of the speaker closest to the wall as your point because off axis sound will diffract around that edge to become the first reflection.

You use the location of the reflected tweeter regardless of where it appears in the mirror. You can move the reflections location in the mirror by moving the mirror forward and back along the wall but if you mark a vertical line on the wall passing through the location of the tweeter/speaker edge reflection and move the mirror you will find that the reflection of the tweeter or speaker edge stays in the same location relative to the wall, ie it will always be on that line you mark on the wall, while it's location relative to the moving mirror changes.

Mark the line on the wall and move the mirror so that it doesn't cover the line. The tweeter will not be reflected in it. Now start sliding the mirror towards the line and, as you reach the line, the reflection will appear. Keep moving the mirror and the reflection stays in the same physical location on the wall while you will "slide the mirror through it" until the mirror passes the line on the wall and the reflection disappears again.

So it doesn't matter where the reflection appears in the mirror. The reflection point is the point on the wall directly behind the reflection and moving the mirror won't change that point on the wall although it will change the reflection's location in the mirror.
