Oak is an open-grained wood, Poplar very closed-grained.  Both are, I would say, medium-high density.   As you said, character of grain has nothing to do with density.

I picked Oak and Poplar because they are available widely and reasonably, have some density, and especially because both are nonresonant, you rap them and get 'thunk' rather than 'ping'.

Yes, Brazilwood (S A Rosewood) and Cocobolo are among the most open-grained (open pored, actually) and high density woods I know of.  They are also highly resonant; both are used for xylophone keys.
