My understanding is that the EMU can route 4 different channels (two to the analog out and two to SPDIF).
Channels 1 and 2 are analog output and right and left audio channels are mapped to them by default.
Channels 3 and 4 are SPDIF output and by default nothing is mapped to them. Shifting by 2 means that you map right and left to 3 and 4 respectively.
In foobar 0.9.4 you have more flexibility and could also map any multichannel output (e.g. center channel) to any of the 4 (2 analog and 2 SPDIF) output channels of the EMU.
