So does that mean that if you substitute a 6E5 for a 6G5 that the eye will close with a weaker signal then what would close the eye on a 6G5?

Bright area may overlap on a strong station. But it is the same except for sensitivity. It MAY be possible to add a resistor divider to lower input level, using resistors in the megohm range.
Depends on the specifics of the AVC. But it's probably pretty safe to assume that subbing a 6E5 for a 6U5 as a tuning ndicator will reduce the usefulness of it for tuning. A guess is that the eye will completely close on weak stations resulting In no useful indication on med and strong stations. Best way to find out is to try it in your specific app.
Yes, I have to agree I've replaced 3 6G5 tubes with no green display with 6E5 tubes and I get a bright green display but ther're useless for tuning.
