But the way to do it is from one conductor to the other; that will take in the capacitance to the shield as well, and will be part of the loading on the cartridge.

It is that load and the resulting electrical resonance that is why you keep the capacitance below 30pf/foot, so as to keep the resonance as high as possible. With MM cartridges it can be so low as to be in the high end of the audio band, resulting in brightness. You might also get addition ticks and pops out of the phono section when it overloads due to the resonance. So its a good idea to tame it!
