what went wrong with Western cooking? My limited knowledge of culinary history suggests it was pretty boring before Marco. I would be interested to hear a different take on the situation.
...is that flavor is created through combination (the Chinese model), rather than that flavor *inheres* (the Japanese model). The former concept can be blamed for all the misconceived cookbooks that flood bookstore shelves; to the latter can be attributed the recent new emphasis (in certain circles) on the quality of ingredients and their simplicity of presentation. Three cheers for organic farming! It ain't the chemicals, or lack thereof, but the finer seed stock and personal attention. The best chefs all know this.clark
