So, okay, I don't have a surround system or even a great stereo (mid-fi, leaning to vintage) What I do have is a Panasonic DVD that plays DVD-A as well. Right now it's sitting on top of the TV. If I replaced my CD player with this DVD player and popped in a DVD-A disc running through my 2-channel system, would I notice a difference? Or is this technology dependent on having a multichannel setup? If I can squeeze better sound out of my limited resources, I certainly want to try it.

I have my DVD-A player in a 2-channel system and am very happy with it. In fact I have been playing more of the few DVD-A's that I have right now than the 100"s of cd's in my collection. Some Panasonic models have an upsampler feature which could also enhance your CD playback and it might improve the sound over the CD player you are now using. So I would suggest giving it a try to see if it's worth replacing the player in your system. Only you can decide which sounds better.
It is doubtful that you'll hear any difference (most people would not). Borrow a disc and see for yourself.
Consider that with older recordings, the DVD-A will use relatively new, hi-quality digital transfers. Also there is the bonus material like photos, video etc.Find a title you think you like and splurge the $15-$25 for a disc. You can do a search of this forum for people's impressions of different titles.
Yes, I think you will notice a difference. Obviously MCH over stereo is a more concrete difference than the sound quality, but (with a good recording) I think you will benefit from DVD-A.
