None. Functionally, there is nothing a fine mechanical wristwatch can do that can't be done better by a cheap watch with a quartz movement.
But you already knew that.
Besides, in this day and age, few people have a practical use for a timepiece on their wrist when clocks are literally everywhere. There are specific use cases like running, diving, mountaineering, aviation, etc. But those activities are better served by a modern smart watch.
So if fine mechanical watches don't have a functional reason to exist any longer, why do people appreciate them?
The answer is:
1. It looks and feels good on their wrist
2. They appreciate the fine craftsmanship
3. Exclusivity
That's what makes them jewelry.
By the way, high end audio is full of jewelry as well.
