First, I brown the ox tails in my air fryer, it also renders some of the fat off them, then I sweat them with garlic, onions and fresh herbs from my garden, sage, thyme and rosemary.
Then I slow simmer them for about three hours until the beans are creamy and the meat falls off the bone, served over brown rice. Mmmmm.
