Well, if you changed the value of the filter caps after the d/a converter you've altered what's effectively a r/c circuit (the capacitor has a set value and a set amount of current will change the voltage in the capacitor at a set rate, called a resistive capacitive timing circuit) and you may actually be filtering out the highs, just like a crossover. The original caps were selected to smooth the 44.1Khz steps in the signal between samples on the cd, increasing thier value lowers the frequency they'll filter out.

the final signal output should be around 1 volt peak to peak max, if you know the maximum current supply and sink of the d/a converter and max voltage there is a formula to calculate the maximum frequency.

also note that the current supply and sink isn't always the same on chips so you could unknowingly alter the shape of the output signal.

if you want to find out i'll dig up that formula, or you could try switching back to the old caps and compare the highs, but it's not a good idea to re-solder connections too many times.

if that isn't it, you can speed up the player, but it's set to read the disk at a set bitrate (1411200 bits/second). speeding up the player speeds up the music as well, but all you would have to do is increase the clocks for all but the control chips, assuming they use external clocks, this probably means changing a crystal or two, assuming you can find a value close enough. if the caps are the problem then speeding it up will only get rid of more of the signal.
