Most folks use a second layer of drywall specifically to combat noise transmission (in or out) and improve overall STC figures. I think anything that adds rigidity to your walls, ceilings and floors is sonically beneficial. However, the mess, time and expense of adding another layer of drywall would certainly dissuade me.
