The less surface area, the less absorption. It's as simple as that. Since it takes no more effort to build them the full eight feet high, that's what you should do.

The wood costs a lot more than the fiberglass, and surely your time and effort are worth even more than that, no? If money is tight and you want the most bang for the buck, forget the wood panel traps and just use 4-inch thick rigid fiberglass. That works well, costs less than building wood panel traps, and it's less work too.
