Here is an executive summary of the deltas between the 3 Linux variants you identified. CentOS is a derivative of RedHat and Ubuntu is a derivative of Debian.Debian only contains core free open-source code where Ubuntu includes non-free licensed code.
CentOS appears to have the longest (LTS) support release durations (good for server stability), followed by Debian, followed by Ubuntu which implies Ubuntu has the most bleeding edge code and CentOS has the most long term stability.
As Soundchekk said, Ubuntu appears to be more targeted towards the install -n-browse newbie crowd where the CentOS and Debian tend to be more technical hands on.

You should probably talk to the Dante card provider to get their feedback on the 3 OSes based on your use case requirements. I read what little documentation they had online and the Linux section was sparse with comments to contact the Dante card provider for specifics.
They also spec'd at least PCIe version 1, which would absolutely neuter NVME drive performance. PCIe version 2 would also bottleneck NVME drives.
Make sure your MoBo has enough PCIe lane options and version combos to support all of your PCIe requirements. E.g. PCIe version 3 or 4 with x8/x8 or x8/x4/x4 or x4/x4/x4/x4.
