It sounds like you don't have an owner's manual... Oh no, Mr. Pat!Before you get to the "mod's and tweeks for any upgrades" part, it's essential that your offset and bias be properly set. The spring loaded switch is used during the bias setting procedure. One of the pots, the one closest to the amp's perimeter, is the bias pot. The other pot is the offset pot. It is essential that the offset and bias pots be set properly to be sure you have optimum performance and reliability.
The hiss you describe is often caused by 12AT7 problems and defective coupling capacitors. You really need a good transconductance type tube tester to properly check your 12AT7s and a scope to best find defective coupling caps, let alone the source of your noise/hiss.

There are so many tweaks and upgrades for the Novacron I really don't know where to start. You can even take it all the way to a MK II version.
