I'm not aware of any MA-1 output cap mods, only M-60 output cap mods. It's true toroidal cores are more wideband than E core transformers, so it may be possible to introduce more line noise into the MA-1 output supply. Since output supply noise isn't a problem in the smaller amps, I wouldn't worry too much about the toroids. Yes, E core transformers are much larger than their toroid equivalents and cost considerably more.The MA-2 has transformers with higher ratings to support the 20 output tubes and 6 driver stage tubes. Lesser amps only have four tubes in the driver stage. The MA-2 has a pair of output stage driver tubes a the input tube, of the cascode, in parallel. Of course, the MA-2 has twice the output stage filtering, and comes stock with Teflon coupling caps and the Caddock resistor package.
