I would guess that what you are looking at is a low voltage, high feedback "tube harmonic distortion" tone circuit before a power IC output. I doubt there are any circuit changes on the impedance switch other than lettering. 12AX7 is mainly useful where you need a ton of gain, phono sections and guitar inputs. They have too much gain for circuits like these without massive feedback and they are pretty weak drivers.
I think what people would want in a tube headphone amp is simply a 2A3 tube amp with an output transformer with a headphone jack, but that is more than $650 from Amazon.
